The grapes come from the Racalmare district in Grotte at an altitude of about 450 meters s.l.m. The soil, rich in organic substance, has a calcareous / clayey structure and a typical pebbly skeleton.

Density: 4,500 vines per hectare.
System: Guyot.
Average yield per hectare: 70 quintals

Third decade of August. The grapes are harvested during the coolest hours of the day. The grapes are selected and picked by hand and placed in boxes.

Immediately after harvesting, the grapes are destemmed and softly pressed, with subsequent static clarification of must and fermentation at controlled temperature of 12 ° C in stainless steel containers

After the natural malolactic fermentation, the maturation continues in stainless steel tanks before bottling and refining in the bottle for a period of 2/3 months before marketing.

Organoleptic characteristics
Straw yellow with light greenish reflections. Aromatic bouquet with notes of exotic fruit and floral notes. Harmonious, delicate and with excellent flavor and freshness. Alcohol content: 12% vol. Serving temperature: 10-12 ° C Pairings: shellfish and seafood appetizers, fried fish.
